I specialise in summery music, so I can't really choose one track in particular.

So... pretty much anything by Ulrich Schnauss, Banco de Gaia's 'live at glastonbury' LP, Any of the Big Chill compilations, Faithless's 'Outrospective', and a lot more remind me of summer!

Don't Look Back into the Sun by the Libertines, everytime i hear it takes me back to summer 2003 and i reminisce about summertime.

I''d also go for Here Comes Your Man by the Pixies, it's got such a great Beach Boys riff

What reminds me of the summer last year, is the entire Killers album. Me and my freinds were listening to it almost constantly, it also reminds me of exams, nicht so gut.

I think "Chicago" by the Groove Armada is another great summer tune, along with "No ordinary Morning" by Chicane.

I'd highly recommend The Optimist LP by Turin Brakes as a great album for a summers eve, but in the spirit of the thread (ie, one song) I'd select Feeling Oblivion or Future boy.
