You're right, Blaze Bayley did join Iron Maiden for a couple of albums, then Bruce Dickinson came back, and Blaze went off and started his own band up. He did an ok-ish job in maiden, but he was never anywhere near as good as Bruce. His own band (just called Blaze) is quite good, I have Silicon Messiah by them. I never actually heard anything by Wolfsbane but I had heard of them because of being a big Maiden fan.
Back to bands that are incredible that no one's heard of....
Novembre - I don't know anyone besides me who's even heard of them, yet they're incredibly good. They're an italian metal band, but their music isn't usually very heavy, it's more relaxing and quite melancholic. The singer has two completely different voices, one sad "clean" voice, the other a death metal growl, which sometimes overlap, so I've no idea how they do this live... It's quite similar Mike from Opeth in that it's hard to believe his growls and clean singing voice actually belong to the same person.
Anathema - Again, very sad music, I still consider them a metal band even though their music is rarely heavy. I find it quite hard to describe their music, some may find it too depressing, though it's not like My Dying Bride, who go for all out misery mixed with a healthy dose of sinister and evil.
Peccatum - I've heard their music allegedly falls under the category of "Avantgarde", which I'm not entirely sure the meaning of. It's very unconventional, lots of experimental type stuff, kinda like progressive rock but coming from a more goth type of background. I think the band is currently just Ihsahn (formerly of the best black metal band ever, Emperor), and his wife, Ihriel. Despite Ihsahn being originally from a Black Metal band, Peccatum only have hints of black metal, and a classical influence too. Ihriel's vocals sound quite opera-ish. It's not at all surprising that this band isn't well known, because their music is not very accessible at all, taking a song called Parasite My Heart for an example, it starts with about a minute of extremely heavy black metal, which stops abruptly and goes very quiet with just a piano and Ihriel's distant singing. Absolutely brilliant stuff, but certainly an acquired taste.
